Wilted Spinach Salad
Description
I absolutely love wilted spinach salad. I guess it helps that bacon is one of my favorite foods ever (except for when I occasionally watch Charlotte's Web with my kids and feel guilty). Anyways, this salad goes well with almost any main course, or you could just eat it alone for lunch or dinner. Sure the bacon isn't great for you, but go ahead and indulge every once in a while (I won't tell Wilbur).

1 package of spinach leaves (washed and dried very well)
½ red onion
6 strips of bacon, diced
1 cup water
1 teaspoon sugar
1 teaspoon vinegar
Salt and pepper to taste
4 eggs, hardboiled
Preparation
Boil some water for your eggs, boil for about 12 minutes and remove from heat. Set eggs in a cold bowl of water and allow to cool. Peel and cut in quarters, set aside.
In a frying pan, cook bacon and onion until bacon is crisp. Add water, vinegar, sugar, salt, and pepper. Heat through and mix well. Stir in spinach and allow to wilt for one minute. Serve in a large bowl and arrange boiled eggs on top.
