I love vegetable pizza. I made this one with some wok cooked vegetables I had frozen.
(In Spanish, below)
Green beans, chopped
One courgette, pealed and sliced.
2 carrots, pealed and sliced.
A red pepper, chopped.
A medium size onion, thinly chopped.
1 tbsp olive oil
1/2 tsp ground turmeric
1/2 tsp ground cumin
For the pizza dough:
5gr dry yeast
3tbsp olive oil
15cl warm water
Para el WOK de verduras
Judías verdes planas, cortadas.
Un calabacín, pelado y cortado en rodajas
Dos zanahorias peladas y cortadas
Un pimiento rojo, cortado.
Una cebolla mediana cortada
Un poco de aceite de oliva
Una pizca de cúrcuma
Una pizca de comino
Una pizca de pimienta molida
Un poco de chile seco triturado
Para la masa de pizza:
Un sobre de levadura de panadería (no vale la levadura química)
250gr de harina
3 cucharadas soperas de aceite
1 cucharilla de sal
15cl de agua templada
For the dough:
In a bowl mix the flour with the salt. Add the yeast and mix.
Add the warm water and mix it for a minute.
Add the olive oil and knead for about 5 to 10 minutes.
Cover the bowl and wait for about 45 minutes until the dough has doubled its volume.
For the vegetables:
Heat the olive oil in a wok
Add the onion a let it cook cover for about 5 min, stiring every now and then.
Add the spices and stir again for about 1 minute.
Add the carrots, the red pepper and the green beans and let it cook for about 5 minutos with the wok covered.
Add salt to taste.
Add the courgette and cook covered for 3 minutes.
For the pizza:
Preheat the oven 10min at 240ºC
Knead the dough again (after the 45 minutes) for about 1 minute and form a ball with the dough.
Flatten the dough with a rolling pin making it thinner, if you like the Roman style, or a little bit thicker, for a Napolitan style.
Add the vegetables to the pizza. Passata is not needed, as the courgette will met in the oven and will act as the passata. If there are too much vegetables you can freeze them and use them as a side dish for any other recipe (or for your next pizza!)
Before introducing the pizza into the oven, cut a bit of mozzarella on top of it.
Cook in the oven for about 10min.
