Zen's bittermelon w/shrimp

1 cup shelled shrimp
2 cups c-sliced bittermelon
2 cloves crushed garlic
1 small sliced onion
1 med sliced tomato
1 large beaten egg
2 pinch rock salt
2 tbsp vegetable oil
1 cup water or ricewater
Preparation
Prepare bittermelon by cuting into half lengthwise,scoop seeds out by a spoon,then slice crosswise 1/2 inch thick,and soak on water with a pinch of salt for 3- 5 minutes,then drain.Heat the oil up to 300 degrees on the pan,add garlic till golden brown for a minute,then onion for another minute,then tomato next minute.Add shrimp and wait till it turns pink 3min.Add water and pinch of salt.Add bittermelon when boiling starts,let boil for 10 min.covered, or wait when bittermelon becomes clear transparent appearance, then add beaten eggs to the mixture evenly till it hardens for another 4 minutes.Do not overcook or do not have the bittermelon turn soggy. Serve hot with rice.
