Zucchini Pie

Description

This is my mother’s recipe that I recently found looking through a very old cook book. It gives me much comfort to share it with all of you. It comes to you with wonderful memories and love.

add to shopping list Ingredients

3 cups raw zucchini (diced)
4 eggs (beaten)
2 onions (chopped)
1 tbl. parsley (chopped)
4 tbls. Olive Oil
¼ cup parmesan cheese (grated)
1 cup bisquick

Preparation

Preheat oven 350 degrees:

Combine all of the above ingredients and pour into a greased pie pan.

Bake for 30 – 35 minutes or until golden.

I just made this for dinner and it was fantastic!!! My husband said he wanted this again. I didn't have any fresh olive oil, so I used Canola. I also added a cup of shredded cheddar cheese. (You can never have too much cheese, lol) I didn't have any fresh parsley, but I had just bought a bottle of dried parsley, so I used that. And I only used 1 onion, and that was almost too much. I'll chop it finer next time too. But it was still good! I can't wait to make it and take to Pot Luck at church next month. Thanks!!! Oh, and it gave me a good idea. Next time we feed the missionaries I'm going to make EVERYTHING Zucchini, lol. This will be the main dish. (It's better than the fish head soup I was going to make, lol)

Delicious! I doubled this recipe and used a cup of diced marinated mozzarella cheese in place of the Parmesan cheese. I also substituted half the parsley with basil. I served this topped with a bit of plain Greek yogurt and a dash of hot sauce.
