Zucchini Salad with Blue Cheese

A salad which doesn't only bring some fresh colours to your plate but also a great, crunchy taste. A combination of raw vegetables with warm toasted pine nuts and the strong flavour of blue cheese.


For the salad:

1. Spread pine nuts in a small ungreased frying pan and fry over medium to high heat, stir occasionally, until golden brown

2. Slice zucchini and bell pepper very thin with a potato peeler and spread them out on a plate

3. Divide crumbled blue cheese and toasted pine nuts on top of sliced vegetables

For the dressing:

4. Combine olive oil, lemon juice, salt and pepper and stir until smooth

5. Sprinkle smooth oil mixture on prepared zucchini salad.

The salad is ready to be served with grilled meat or fish as a fresh and crunchy side dish!
