Many people in my family are vegetarian but, being from Texas, still love Mexican food. This was a recipe I adapted so that everyone could have something to eat at our large family gatherings. Whether you make it as is, or throw in your own veggies, it is sure to please even those carnivores in the family.

Most people love chocolate chip cookies, but this version of that classic recipe is jazzed up with some creamy peanut butter that really gives them some zing. When you are in the mood for something a little non-traditional, whip up this quick recipe and your taste buds will not be disappointed!

Popeye taught us to eat our spinach at a young age, but if you were like me, you didn't start appreciating spinach until you were older. As a child I hated it and refused to eat it; now I love it. Spinach is one of my favorite side dishes because it is easy, goes with anything, and is also good for you. Oh yeah, Popeye had a good point when he said "Eat yer spinach". Spinach is loaded with vitamins, antioxidants, and iron among other things. So the next time you need a simple dish to accompany your main course, try this quick recipe. Your mouth and your body will thank you.

On a cold winter night, who doesn't love to curl up on the couch with a warm bowl of soup? This is the ultimate comfort food. Creamy and satisfying, this soup can be a a great starter to any meal, or serve it by itself with some bread or crackers. Either way, your stomach will be satisfied!

I adapted this recipe from one that I saw on a cooking show. They were grilling the chicken, but I didn't have a grill, so I figured sautéing the chicken would work just as well. It is relatively easy to make and pairs well with potatoes, pasta, or rice, and any vegetable. This recipe is actually pretty healthy as well. The rosemary and lemon give it a refreshing taste that is sure to please.

I love chicken sandwiches, especially spicy ones! This is a simple recipe that you can make when you want something a little more exciting than the everyday sandwich. Spicy chipotle mayonnaise gives it some kick, while the avocado adds some creaminess. You could even make the chicken by itself and serve with some rice and veggies, instead of making a sandwich. There are so many ways to enjoy this simple recipe!

So many different recipes for making “Sangria” especially down South close to the boarder. Sangria can be experimented with different combination of fruits and even wine. Many even use brandy, club soda, claret, and Bordeaux. I prefer the simply version.

These sinfully delicious peanut butter and chocolate dessert bars are out of this world. As a "sweet" fanatic married to a "salty" fanatic, it's always a struggle coming up with desserts that can be shared and devoured with equal gusto. These bars are the solution.
