I love cooking, sharing my kitchen stories, and learning from others. I work in for the federal government, but there is nothing confusing about my food. In addition to cooking, I love horseback riding and am an advid sports fan (esp. the Green Bay Packers).

This is one of my favorite things to make for a Sunday dinner. One, it is easy. Two, it is yummy and makes great leftovers. Three, it reminds me of Thanksgiving (in a lot less time!) I make several variations to this recipe depending on what vegetables i have in the house, but it is always a crowd pleaser.

I am a huge fan of spinach and artichoke dip! This recipe came about when I was trying to put together an orange sweet potato crockpot dish, and I forgot to buy sweet potatoes! I had to leave for work and had minutes to improvise. Grabbing what I had on hand I came up with this dish. I was rather nervous because the dish was thrown together so quickly. However, I was not disappointed- it was yummy! Ron loved the dish too. I guess sometimes favorites are created on the fly!

I made this dish for Ron's sister Julie and her hubby Chad after they had little Drew. It looked so yummy Ron and I had to make it for ourselves. The picture does not do this casserole justice because it is so yummy! Enjoy!

I love a good thick spicy gumbo. The restaurant I work at has the best gumbo ever. I wanted to recreate my own version to make and enjoy at home. In gumbo, roux is key and if burned or undercooked can result in not so good gumbo. Since my favorite gumbo from the restaurant is top secret, I searched around for something close I could follow. I saw this recipe at Vintage Victuals, and it looked so yummy! The picture was not deceiving because it was delicious. I adjusted the ingredients a bit and used the crockpot, but kept that wonderful onion on the top! I served this with mashed potatoes and steamed green beans. We raved about this recipe and I am sure we will be making it again. Enjoy!

For the life of me I don't remember where i found this recipe. I usually am very good about writing that down, but not this time! I am pretty sure this is a WeightWatchers recipe, but-again- not positive. I love Chinese carry out. Yum. However, it can be really unhealthy. This recipe takes an old favorite, and lightens it up so you don't feel so guilty after eating it. I actually like the sauce more than I do at the restaurants. Most of the time the sauce is too sweet and omits the heat! This recipe give the heat and sweet, but not all the fat and calories. Enjoy!

I have been on a bit of a pesto kick lately. I found this recipe on the Kraft website and wanted to give it a try. I was really yummy. I liked the combination of pesto and tomato. Yum. It is super easy and quick- which is great for a weekend. I served the chicken with a little pasta, but you could sub in veggie, rice, or a nice salad. I also scaled down the amount of cheese topping (the original called for one cup) Enjoy!

I found this recipe on Pioneer Woman's website and made it for Valentine's Day. It is so wonderful. My guy said it was one of the best things I have cooked for him! Depending on the size of the steaks you can probably get more serving out of the sauce.

Wisconsin had a warm streak! Sunday night involved important matters. Grilling, pasta salad, and The Pacific (which is amazing). I love making pasta salad. One, it is easy. Two, you can basically clean out the fridge. Three, well they are just yummy. This one is really good too. You could also add some mushrooms to boost the veggies even further. Enjoy!

We were on a much needed vacation the first part of May, in Puerto Vallarta, Mexico. I have to say - I really did miss cooking! Anyways, I drank a lot of mango flavored cocktails in Mexico and was having a craving for mango about a week after I returned. I made this on Mothers Day, and it was very well received. Next time I am going to throw in a few strawberries. Enjoy!

Ahhh.... blue cheese. I love you. Wisconsin has been super hot this week! We wanted to grill this week, but it was a little too hot. I had a breakfast dish similar to this a few weeks ago, and decided that this was the perfect opportunity for "brinner". I love the combination of blue cheese and bacon. Throw in the eggs and this was delicious! Enjoy!

Our new grill finally arrived! I was so excited I could barely contain myself. We have been grilling on this tiny little tailgating grill for the past year and a half. Heat control, warming rack, SPACE...ahhh...bliss. We had some friends over for dinner, and I needed a quick marinate. This turned out so good. The lemon with salt prosciutto is wonderful. Enjoy!

As you may have noticed I like rice a lot, and beans, AND chicken sausage. I could literally live off rice and beans, and be completely happy. When I was in Puerto Rico last year, I would eat rice and beans almost twice a day. I would save any dinner leftovers and eat it for breakfast with a poached egg on top. Yum. I miss Puerto Rico. Anyways, this dish came together one night when I was at a loss of what to make for dinner. It turned out delicious. And yes, I did eat some of the leftovers for breakfast with a poached egg on top. I love pork tenderloin and anyone who knows me knows I love olives. Why not put the two together!? The pork is cooked for over 15 hours and falls apart at the touch of a fork. Served over a nice crusty piece of bread. Yum! You could also do sandwiches on your griddle with this meat. Or even add some cheese, good salami, capicola and you almost have a muffaleta sandwich- crockpot style!

I saw this on www.tasteandtellblog.com and knew I had to try it. I always like to try new combinations of flavors. While some are awesome and some are not so awesome it is always fun to experiment. I really liked this recipe! I reminded me or caramel corn, but had a smooth peanut butter taste. Enjoy!

My cousins were in town for the Packer v. Bear game (Go Pack Go) and I wanted to put something together for them after the game. The football game did not start until 7 pm, and that means the crockpot is in order! Shredded turkey sandwiches are my favorite thing to make. In addition to being really easy- they are really yummy. We serves our turkey over my mashed red skin potatoes and a piece of wheat bread (my Mom calls it a "Hot Shot"), but it is great as a sandwich too. This recipe is pretty big because we had to feed a lot of people, but the meat freezes well. Enjoy!

Today was the big Packer playoff game. Unfortunately, the Packers lost in overtime in a nail biting finish. Hopefully they will make it further next year. On another note, I made this yummy dip for the sporting festivities. I really like buffalo chicken wraps, wings, pasta (coming soon!), ect. I have seen a couple different variations of this dip floating around various blogs. This is my version of this delicious dip (the picture does not do it justice). Enjoy!

This was a bit of a throw together meal the other night. I have had Kielbasa sitting in my freezer for awhile, and wasn't sure what to make! This dish came together great, and its really easy! I served it with a little rice, and a side of spinach. Enjoy!

I love sauteed onions. However, I wanted to try something a little different, and it was great! I used a chicken bouillon cube with this onion, however next time I would love to try beef to get that yummy french onion soup flavor. Enjoy!

First, please excuse my hand taking up half the picture! I was having a little trouble getting a good photo. This is one of my favorite cold dips, and one of the easiest too! This is a great recipe for a summer BBQ or just for a great snack. Enjoy!
