Sassy Stuffed Peppers
I think everyone's mom or family member had a recipe for stuffed peppers they remember from their youth. Maybe not everyone feels this way, but I always loved stuffed peppers. This recipe is different than my Mother's, but still very very yummy. I mixed it up with a few green olives, paprika, and garlic. The peppers came out so yummy! I think that this will stay on rotation. Maybe with a little lamb and feta? Oh the possibilities. Enjoy!
Spinach and Artichoke Dip Crockpot Chicken
I am a huge fan of spinach and artichoke dip! This recipe came about when I was trying to put together an orange sweet potato crockpot dish, and I forgot to buy sweet potatoes! I had to leave for work and had minutes to improvise. Grabbing what I had on hand I came up with this dish. I was rather nervous because the dish was thrown together so quickly. However, I was not disappointed- it was yummy! Ron loved the dish too. I guess sometimes favorites are created on the fly!
Mango Salsa
We were on a much needed vacation the first part of May, in Puerto Vallarta, Mexico. I have to say - I really did miss cooking! Anyways, I drank a lot of mango flavored cocktails in Mexico and was having a craving for mango about a week after I returned. I made this on Mothers Day, and it was very well received. Next time I am going to throw in a few strawberries. Enjoy!
Lighter General Tso's Chicken
For the life of me I don't remember where i found this recipe. I usually am very good about writing that down, but not this time! I am pretty sure this is a WeightWatchers recipe, but-again- not positive. I love Chinese carry out. Yum. However, it can be really unhealthy. This recipe takes an old favorite, and lightens it up so you don't feel so guilty after eating it. I actually like the sauce more than I do at the restaurants. Most of the time the sauce is too sweet and omits the heat! This recipe give the heat and sweet, but not all the fat and calories. Enjoy!
Poached Salmon with Creamy Piccata Sauce

Scrambled Eggs with Bacon and Blue Cheese
Ahhh.... blue cheese. I love you. Wisconsin has been super hot this week! We wanted to grill this week, but it was a little too hot. I had a breakfast dish similar to this a few weeks ago, and decided that this was the perfect opportunity for "brinner". I love the combination of blue cheese and bacon. Throw in the eggs and this was delicious! Enjoy!
Kielbasa with Peppers, Onions, and Tomatoes
This was a bit of a throw together meal the other night. I have had Kielbasa sitting in my freezer for awhile, and wasn't sure what to make! This dish came together great, and its really easy! I served it with a little rice, and a side of spinach. Enjoy!
Dulce De Leche
This is one of my favorite things to make to give to friends during the holiday. This is a rich creamy caramel sauce that is positively addictive. My friend texted me to tell me she couldn't stop eating it. I assure you this is not a problem. it is a problem when it is gone- very sad. This is another example of "kitchen deceptions". This is the easiest thing to make- ever. There is one ingredient- well 3 if you count the pot and water... Make this and your friends will love you even more than they already do. I like to add a little spoonful on the of my apple pie- or even better- off a spoon directly out of the jar. Enjoy!
Grilled Key Lime Mustard Salmon
Ron and I have been on a bit of a salmon kick the last few weeks. I love grilled salmon and am always trying to find new combinations for the grill. This may seems like an odd combo, but trust me, it is delicious. Neither the mustard or the lime are overpowering. Wisconsin is getting ready for another heat wave tomorrow, and we are getting our cooler packed to spend some time floating down the Wolf River. Have a wonderful weekend and enjoy the salmon!
Taco Burgers
Happy Saturday! We really have been on a burger kick lately! However, most of our burgers have been a bit boring. I decided that we needed to spice up our buns with a taco burger. This is a super easy recipe and tastes great. We used salsa, guacamole, cheese, and sour cream but you can use any of your favorite taco toppings. Cheesy Chicken Spaghetti Casserole
I made this dish for Ron's sister Julie and her hubby Chad after they had little Drew. It looked so yummy Ron and I had to make it for ourselves. The picture does not do this casserole justice because it is so yummy! Enjoy!
Saucy Pork Chops
I saw this recipe at Vintage Victuals, and it looked so yummy! The picture was not deceiving because it was delicious. I adjusted the ingredients a bit and used the crockpot, but kept that wonderful onion on the top! I served this with mashed potatoes and steamed green beans. We raved about this recipe and I am sure we will be making it again. Enjoy!
Peanut Butter Popcorn
I saw this on www.tasteandtellblog.com and knew I had to try it. I always like to try new combinations of flavors. While some are awesome and some are not so awesome it is always fun to experiment. I really liked this recipe! I reminded me or caramel corn, but had a smooth peanut butter taste. Enjoy!
Oreo Truffles
I have wanted to make these for awhile and decided to save the recipe for Christmas so I could share and wouldn\'t end up eating them all. I am not a huge chocolate person, but these are so yummy. In addition to being yummy, they are super easy to make and always a hit. Enjoy!
Tuscan Chicken Simmer
I have been on a bit of a pesto kick lately. I found this recipe on the Kraft website and wanted to give it a try. I was really yummy. I liked the combination of pesto and tomato. Yum. It is super easy and quick- which is great for a weekend. I served the chicken with a little pasta, but you could sub in veggie, rice, or a nice salad. I also scaled down the amount of cheese topping (the original called for one cup) Enjoy!
Grilled Ribeye Steak with Onion-Blue Cheese Sauce
I found this recipe on Pioneer Woman's website and made it for Valentine's Day. It is so wonderful. My guy said it was one of the best things I have cooked for him! Depending on the size of the steaks you can probably get more serving out of the sauce.
Grilled Lemon Sage Chicken Wrapped in Prosciutto
Our new grill finally arrived! I was so excited I could barely contain myself. We have been grilling on this tiny little tailgating grill for the past year and a half. Heat control, warming rack, SPACE...ahhh...bliss. We had some friends over for dinner, and I needed a quick marinate. This turned out so good. The lemon with salt prosciutto is wonderful. Enjoy!
Roasted Lemony Teeny Tiny Potatoes
Lemon goes great with a roasted potato. It looses the a lot of the tartness, but keeps a unique flavor. Almost making the potatoes refreshing! This is super easy. You can easily do this with a regular potato- or even a purple potato (how pretty). Enjoy!

This a fantastic and comforting soup for a chilly winter night. I wanted to try making an enchilada soup, but have been getting home a little later these past few weeks. In comes the trusty crockpot! Tortilla Crusted Pork Chops
Do not let this picture deceive you. Trust me because these pork chops are fantastic. I was in a dinner rut last week, and had limited groceries on hand. After digging around my fridge I came up with this recipe. It was a big hit at our house. You could easily use potato chips or maybe BBQ kettle chips ... yum-yum... This is super easy weeknight meal. I served this with some greens and we were set with a delicious dinner. Enjoy!
Tuna Noodle Salad
Earlier this week Ron and I were craving a cold pasta salad to go with the warm days. We recently made a chicken pesto salad and thought a retro tuna pasta salad would be perfect. I added a few different ingredients to break from the ultra traditional pasta salad. It was just what the doctor ordered! Next time I think a few dashes of curry powder would be a wonderful twist.
