Barbecueing Meat the Sicilian Way
Here is an excellent lamb dish grilled the sicilian way. For those concerned about the health hazards of charcoal-grilling producing carcinogens called polycyclic aromatic hydrocarbons (PAHs), no need to worry. Use leaner meats that drip less fat. Fat, which burns, is the reason for the infusion of smoke that coat your meat. Also turning meat frequently results in fewer HCAs (heterocyclic amines) which is another carcinogen, caused by the charring. Wether you use propane or charcoals, trimming fat, using leaner meats, turning your food frequently on your grill and marinating food in lemon (a Sicilian favorite) will reduce both carcinogens by 90%.
Arroz ala Filipina
This recipe is a spin-off from the many Spanish rice dishes. A Filipino-style Arroz de Valenciana.
Broiled Fish
This is my favorite broiled fish, it was stuffed with onions, ginger, garlic and tomato. Milk fish for me is the best, but any med-size fleshy fish of your choice would be good to broil.
Arroz con Pollo
My Step-Mom, Cora, makes the best Arroz con pollo around!. unfortunately she won't give me the recipe! So I made my own, and tried to make it as similar as possible. Arroz con Pollo is a great meal to make when you have a large group to feed as it is really simple to make. Throw in some vegetables or seasonings that you like, or just make it as is. It will surely become one of your favorites too!
Italian Eggs
What makes these eggs "Italian"? A movie! Moonstruck, to be exact. There is a scene in Moonstruck where Cher's character is making breakfast and she hollows out a slice of bread, tosses it in a frying pan and adds an egg to the hollowed out center. From the time I first saw that movie (long time ago!) I've been making this particular variation of those eggs.
