Every time I have a few overripe bananas, I whip these up. They are quick and easy to make, and are so moist and delicious that they don't last long. The recipe makes 18 muffins (fill muffin cups around 1/2 - 2/3 full) or four mini loaves. Today, we brought these to school for my son's birthday snack (we left out the nuts) and the kids loved them.

I love using Asian inspired ingredients when preparing a steak. The salty/sweetness really takes the flavor of the meat to a whole new level. Flank steak seems to work best because it is a thinner cut of meat, but still has a lot of juiciness to it so it won't be dry. Try this marinade the next time you are in the mood for something a little different, and I am sure you will love it as much as I do.

My favorite recipe of all time. It initally was my Mother's and she made a version very similar to this. There were some items my sister didn't like so she added some of her own touches. Years later I was out of some ingredients so I substituted a few things and voila, here is the resulting recipe. It is creamy, cheesy and spicy all in one. It goes great with black beans and spanish rice. Take it to work the next day too. All your coworkers will be jealous!

I love this recipe because it can be served in so many different ways. Keep it in its original form, and serve it over some leafy greens with a lemon vinaigrette. I found this recipe online. You can buy black beans and mash them yourself, as the original recipe suggested. Or, simply buy premashed beans. Substitute refried pinto beans if your kids are picky. Quesadillas are budget-friendly and easy to make ahead for snacks. Simply reheat them in microwave. I garnish this dish with avacado because it's edible and delicious. Parsley looks pretty, but I can never use up a whole bunch. It sits for days in the refrigerator and until it's finally tossed. Not a good use of my pennies! Slice up a fresh melon for dessert. Mexican food is always a winner with my husband... it's the melted cheese!

My Sister makes this for breakfast and it is almost addicting. It is super easy to prepare, but is extremely decadent tasting. You can make a cream cheese frosting to top it off if you really want to indulge. Your kids will definitely love it! (I think she may have named it for her little monkey...ok, child, Sam)

I used to love to go to the Outback Steakhouse Restaurant with my family. My favorite entrée was the Alice Springs Chicken. However; eating out can be very expensive these days. So one day I was craving Alice Springs Chicken and it occurred to me that I could make it myself. So from trial and error I have developed my own version of Alice Springs Chicken.
