Italian Meatless Meatballs
This dish was originally given to me by my Italian mother in law as a meatless meatball by using breadcrumbs rather than meat. I took it a step further and added in some bulgar which gave it a meatier texture and was a great healthy substitute for the meat. It has also been 100% Italian Tasted and Approved!
Minestrone Soup
This recipe for minestrone soup comes from both my side of the family as well as my husband's side. It is a simple easy soup that I like to prepare because it involves simple everyday ingredients. It is so flexible that if you want to bulk it up you can add beans or even meat. You can add tomatoes or you can omit them if you prefer. Use it as an appetizer or a main dish. Lunch or dinner... either is fine. Serve with bread and salad.
Easy Italian Antipasto
Antipasto is a very flexible and customizable Italian dish. My version does not include many ingredients and can be bought easily in just about any grocery store. I hope you take the recipe and run with it!
