I love to cook fish because it is so versatile and usually simple to make. This is one of my Mom’s creations that helped instill my love of seafood at a young age. Creamy, lemony, herb butter coats the Tilapia and gives it great flavor. You could substitute any fish you like: salmon, halibut, etc. Serve it with some fresh steamed vegetables and you have a quick, healthy, meal!

My favorite recipe of all time. It initally was my Mother's and she made a version very similar to this. There were some items my sister didn't like so she added some of her own touches. Years later I was out of some ingredients so I substituted a few things and voila, here is the resulting recipe. It is creamy, cheesy and spicy all in one. It goes great with black beans and spanish rice. Take it to work the next day too. All your coworkers will be jealous!

Great Grandma Lucille was not one for using canned sauces; she preferred to make her own. Boy were we lucky when she would whip up some of her famous homemade spaghetti sauce! Her recipe is actually extremely simple, so I am not sure why more people don't make their own every once in awhile. The difference in taste is amazing! Use fresh herbs to really give it a homemade touch.
