Caesar Salad
I love to order Caesar salad when I go out to dinner, but I never was able to duplicate that wonderful taste at home. Bottled Caesar dressings never seemed to satisfy, and boxed croƻtons never had the same flavor or crunch. Finally, one day I came across this recipe in my Mother's recipe box. It is simple enough that anyone can make it, but tastes just as good as the ones you get at an Italian restaurant. Serve it as a starter, a side dish, or even top it with some grilled chicken or shrimp and serve as a meal. I think Caesar Cardini, himself (inventor of Caesar salad...not Julius Caesar, as some people like to think) would approve!
Grilled Strip Steak with Lemon-Thyme Butter
Nothing is better than a big, juicy steak straight off the grill. I am a believer that steak should be lightly seasoned, for the most part. However, I love this recipe with the lemon-thyme butter on top of the steak. It is such a refreshing change of pace from the normal steak seasonings and sauces. Serve it with a baked potato and some fresh vegetables, and you have a well balanced meal.
Fried Lemon Catfish
Here's an old southern catfish recipe. My husband's aunt gave me this delicious recipe for fish. He enjoys this dish.
