My wife is always wanting me to let her cook. She works all day and I work around here all day. Even when my business was at its peak, I still found time to cook, clean, do laundry and attend to the ‘fix-it’ list. That’s also along with rebuilding two bathrooms, a deck and a kitchen. Our agreement is that she can cook on the weekends.

Last nights dinner was simple but good. Tonight, however, I have an official request; Pizza! My wife has been on a rather strict diet for about 8 months now. She and I both are dying for a pizza. I have been cooking to please her and keep her on track with her diet. So tonight, screw the diet! It’s pizza: A plain pepperoni and cheese for me and a white pizza for her; made from scratch.

Honestly, I wish I could say that it was something spectacular. Unfortunately, I can’t. dinner was nothing more than a few humble center-cut pork chops that I marinated in Speedie Sauce, vacuum sealed and threw into the freezer. I threw them on the grill along with a couple of zucchinis that I marinated in a homemade Italian Balsamic vinaigrette. We also had some of my macaroni salad leftover from the weekend. That’s it.

Ice cream try Skinny Cow Mini Fudge Bars, only 50 calories & very good flavor. They have other ice cream desserts but all have more calories.
