Jicama is a root. Kind of sweet. Usually eaten raw, or soaked in water with lemon & salt. Green curry is a sweeter curry than red curry. I suppose that you could substitute red curry. I\'d suggest lemon grass to substitute for cilantro, but I suppose anything that you like is good. I don\'t know if celery leaves would get you the sweetness. Maybe Italian parsley?

Actually, they\'re not really hot (but then, I order extra jalapenos on my nachos). You could cut the serrano and Sriracha, of course, and just use ginger and soy.

I\'m sorry, but sugar is not optional. It is forbidden! :) My grandfather used to put honey and butter on his cornbread (west Texan). My dad\'s family (from Georgia) eats it crubled up in buttermilk.

An important point: you have to get high grade tuna for (i) taste, but more importantly (ii) health reasons. If you\'re paying $10 a pound, you\'re asking for disappointment. Thanks for posting. Sushi is hard for the initiate, but a lot of fun to make.

Ah, jump, you\'re not from Texas, are you? :) Down here, we call stuff with beans in it \"soup.\" ;) You should give some chipotle chilis (canned or powder) a shot for that great smoky taste. Also, throw in some molasses--not much, just a taste. Trust me.

Sorry, but I\'ve got to say, no flour. Use white corn meal. Otherwise, looks good. And I use bacon grease or crisco in my cast iron skillet. Doesn\'t detract from the cornbread & buttermilk one bit. :)
