Seafood, Curries, Cheesecake & anything with Chocolate ;)
We’re still experiencing cold Winter temperatures here in Tanzania, so the other day I was inspired to make this delicious warm salad for lunch. It comes from the August copy of the South African “Essentials” magazine, and I discovered it one night last week when I was reading in bed, and decided that I just had to make it soon ! (See my version of the recipe below, as I did not have all the ingredients called for on hand so had to adjust it a little). I made it for lunch for my daughter & I one day last week when my husband was in the big city for the day (if I served my husband a SALAD for lunch, he’d turn his nose up and ask where the meat & bread was, for sure – ha ha !). I added some side items for my daughter but I thoroughly enjoyed this salad on it’s own and found it to be quite filling. I did serve the left over (cold) salad with supper and surprisingly, my husband rather enjoyed it !
I made these for my daughter\'s school Christmas concert last year and the kids loved them - I saw some adults sneaking a few, too ! (Note - You can halve the ingredients to make around 20 cupcakes, if you prefer. Ready made icing can usually be found in the cake decorating/frosting aisle in your supermarket)
These light & crispy snacks are just the thing to serve with drinks before your meal. (They go exceptionally well with a nice glass of chilled Chardonnay !)
Light and airy, fat free and easy to make, meringues are always a hit with both children and adults alike. (Kids love to make & decorate these with you, too !) You can serve them with afternoon tea, or accompanied by freshly whipped cream (or ice cream) and fresh fruit for a more decadent dessert. They’re also great to pack into school lunch boxes or to take with you when you’re going on a long car journey. I added a drop of red food colouring to make these into pink meringues, baked them in paper cup cases & sprinkled them with cup cake decorations for a festive, party feel !
These sweet mince pies are made with fruit mince, which you can usually buy in jars in the tinned fruit section of your supermarket here in Africa. I add a few tablespoons of brandy to mine, which gives this recipe a lovely 'boost' !
These festive looking chocolate crunchies are always a hit with the kids over Christmas ! (But adults enjoy them just as much !)
This is a tasty recipe I came up with the other day when I had a large tub of Cottage Cheese (Cream Cheese) that I needed to use up. I’ve called this a “skinny” cheesecake not only because it’s relatively low in fat/calories but also because once it has been baked and “sets” it is rather skinny in size – but still very tasty ! I garnished it with thinly sliced Strawberries, but you could use any other fruit you happened to have on hand or you could just leave it plain if you preferred. Enjoy !
I made these for breakfast a couple of Sunday’s ago - I’m not sure what their ‘real’ name is, but I just call them “Egg & Bacon Cups”. They are so simple to make - especially when you have a crowd of people, or need a hearty breakfast in a hurry ! I saw this idea on TV a couple of years ago – it originated from Antony Worrall Thompson and I think it was on the show “Saturday Kitchen” that I saw it. (This is just loosely based on his recipe as I can’t even remember what the original recipe was now !) Basically, you just place whatever you’d like for breakfast into a greased muffin cup, break an egg on top and bake it in the oven. These ‘cups’ can then be served on top of a slice of hot buttered toast for a quick and satisfying breakfast.
These Christmas cookies are quite simple to make - and the kids will have great fun helping you to decorate them, too !
With the festive season upon us, this fat free tuna pate helps ease the calorie conscience a little ! Serve it with pre dinner drinks accompanied by crackers or melba toast - delicious !
