My daughter is going to make this as soon as I get her a pumpkin. We have duck eggs so we are set. As far as the chicken eggs I figure it would be an issue of finding out how may regular eggs equal a duck egg. I think you have to do it by weight due to the sizes vary on duck eggs.

I fix them this way alot but I add a little finely chopped onion, a little bacon, and a little shredded potato to the kraut. I have always made my kraut this way.

can you use something beside pink salt? I found it fro $19.00 for 5 lbs all the way up to $44 for 5 lbs

Great Tip. Also make sure that the eggs are not that fresh or they stick to the shells. It is important to let them sit for a few days or the whites shred and stick to the shell.

Making this tonight with a Southern supper dinner party. We are having Meatloaf, mashed potatoes with real butter, cream corn, bacon fried green beans, broccoli casserole, and brown and serve rolls. The peach Cobbler is dessert.
