New Orleans

about me:

I love food (don't we all?), and I'm making a career out of it. I recently quit my job of four years to pursue my dream of starting my own business. At the same time, I was growing my food blog, BlakeMakes.com. At some point, my passion for food, and my food ticket (my career, aka, the paycheck) got in bed together. The result, a job that not only encompasses my dream, but provides for me and mine. Let's see where this goes.

You've heard the best things in life are free, but I think the best things in life are easy. This is a great easy chicken recipe.

Blender Hollandaise

I make this hollandaise in a blender. I setup my blender right next to my range top. This way, I can ladle (I use a small gravy ladle) the butter into the blender without making a huge mess. Plus, keeping the butter hot (boiling) will ensure that the egg yolks cook. We keep our house quite chilly at night, and since I so often make this for breakfast, the blender is always very cold on “Eggs Benedict Mornings.” So, I run the blender’s pitcher under hot tap water to heat it up.

I love all the food pics I take for Blake Makes, but every now and then, some of the food really strikes a pose. Last night’s dinner looked so good in front of the camera, we’re in talks with Vogue for next month’s cover. We made Caramelized Onion Pizza. It was spectacular. The onions cooked down to dark, sweet goodness for about an hour, and I made the pizza crust from scratch.

These spaghetti and meatballs will make you weep. The meat mixture is superb, but the sauce is what makes it. It’s deep. Taste it and you’ll swear you’re in the Godfather movie.

Red Beans & Rice (New Orleans)

Bridget used to be known for her homemade red beans and rice. This is New Orleans, and every Monday we citizens clamor for a nice steamy bowl of the good stuff. Today’s not Monday, but we were really craving red beans, so here we are. About a year ago we discovered Blue Runner Red Beans. Sorry Bridget, you just got served. Yes, these beans are in a can, but after a little Blake Magic, they certainly don’t taste like they do.

In my first bowl, I added soup then bread. For seconds and thirds I added bread then soup. You do that, too.
