I have been using my new Panini Press for lunch everyday. It is just so easy to experiment with whatever ingredients I have on hand. Today I made a ham and cheese panini on multi-grain bread.
Here is a simple twist to add a little excitement to the average corn side dish. The corn and zucchini compliment each other nicely and the presentation looks wonderful.
I made this for lunch this week and it was sooo easy and sooo yummy! (…and spicy too!) You could add lettuce and tomato too. For a healthier version you can substitute grilled chicken.

Bell peppers stuffed with beef and rice. You can easily replace the beef with chicken or turkey for a healthy alternative.
