I served this with sweet potato puree and wilted kale and garlic.
At home I like to keep things simple and fast. Here's a quick noodle dish.
- For this dish I served a plain rice flavored with some chopped chilies and fresh curry leaves. - Place rice in small ramekin and unmold on plate. Place salmon on rice. Spoon salsa over and around salmon. If you prefer your salmon grilled, that would work well too!
For this version I served it with curried new potatoes and fennel. Toss halved potatoes in your favorite curry or marsala mix with a little oil, salt and pepper. Add to the pan with the chicken about 40 minutes before you figure the bird will be done. Add a quartered fennel bulb and some whole garlic cloves at the same time as the potatoes and it becomes a simple one pan meal!
This is my go to dish for Sunday night dinner and dinner parties. The pork comes out perfect every time.
Fiddleheads are a great ingredient that only come around for a week or two a year. Celebrate them with this great recipe. Fiddleheads are available in the early spring here in the Northeast and the season is just a few weeks long. If you can't get them, I suggest using asparagus as a good substitute. Enjoy.
