I found that if you leave the cakes to cool slightly in the oven (switched off), the cake doesn't collapse as much ^_^

The all time favourite brekkie dish !! Quick, simple but taste oh so delicious ...yum yum... A fail-proof recipe...except when you try to get the eggs soft boiled :P It's a hit and miss for me LOL

Espresso Cupcake + Dark Choc Ganache

Espresso Cupcake + Dark Choc Ganache

I got this recipe from Nigella's "How To Be A Domestic Goddess" cook book. The base is from the Cappuccino Cupcakes recipe, but since the icing that comes with it is super sweet, I swopped it with the icing for the Espresso Cupcakes (now you might ask, "why not just use the cupcake base from the Espresso Cupcakes then?". Simple...the recipe calls for muscovado sugar which is not easy to find). This cupcake is not too sweet, the coffee aroma is distinct and the dark chocolate just add a little bit extra sweetness and flavour ^_^

Coffee + Milk Jelly

Coffee + Milk Jelly

star_onstar_onstar_onstar_onstar_on Comments (4)

This is definetely jelly for adults :) The bitterness of the coffee and creaminess of the milk is just perfect ! If you want to make it more adult, just add liquor like Frangelico, Brandy, etc to the coffee jelly.

Rose Scented Cupcake

I finally went to this shop that sells pretty much everything you need for baking :D And they sell rose petals ! I'm not too fond of rose scented food, but this is an exception as the petals are just so pretty. If you like rose scented foods, you can add more rose water, just remember to then reduce the amount of milk you add in (or you'll have runny mix ;D).

Teriyaki Hamburger

This original recipe is from one of Harumi Kurihara's. I just adjusted the ingredients a little by replacing half of the onion with leeks. Also, if you don't like pork, you can always make an all beef version or even an all chicken version *_^

Hummingbird Cake w/ Lime Cream Cheese Icing

Hummingbird Cake w/ Lime Cream Cheese Icing

star_onstar_onstar_onstar_onstar_on Comments (2)

I think the traditional Hummingbird consists of pineapple, banana and coconut. Since Kiwi fruit is in season now in Australia, I thought I'll try replacing half the required amount of pineapple with kiwi. I quite like it, as the kiwi fruit is a little tart, so the cake is not too sweet and you get the tangy bite ^_^ If kiwi is not readily available, just double the amount of pineapple.

Fruit Tart

Fruit Tart

This is probably the easiest dessert you could make and it looks amazing ! The gelatine glaze will make it looks shiny, but it's optional, it will still look pretty without the shine ^_^ The cocoa tart is taken from Nigella's Chocolate Raspberry Tart. I use custard as the filling instead of using the mascarpone which I found a bit dry and pasty. It may look decadent, but it's very light in taste. The bitter cocoa tart, the sweet custard and the tartness of the fruits (well, depends on what fruit you use, but in this case they are quite tart) balance each other out.

Gateaux Tiramisu

Gateaux Tiramisu

star_onstar_onstar_onstar_onstar_on Comments (2)

Well...maybe I should call it a cheater's gateaux as there are no baking involved ! Usually I would make it in a deep serving bowl, but because a friend want this as a b'day cake, I think it's better presented it this way.

Blood Orange Friand

Blood Orange Friand

This is one of Donna Hay's cake recipe. I think this is the best way (not the healthiest obviously :P) to utilise all those egg whites you've got left after making custards for the choux puff. (PS : That orange in the photo, is fresh blood orange, not the glace orange :D)

Italian Sausage Roll

Came up with this recipe for the Sausage Roll competition at work :P The base is taken from Harumi Kurihara Hamburger recipe (which I've posted b4), with slight modification to the ingredients.

I'm quite surprised on how this recipe turns out :D I was trying to figure out a way to use up the leftover pineapple from baking hummingbird cake. The sesame seed is really fragrant and the sweetness of the pineapple just add some bite to it.

Kiwi Mascarpone Tart

Kiwi Mascarpone Tart

This is actually the "Black & White Tart" recipe from Nigella's book. But since we can't find the white berries and blackberries, kiwis will do just fine ^_^

Teri Tori Wrap

Teri Tori Wrap

This recipe is super easy to make and assemble. If you want to make a lighter version , just omit the noodles. You can keep the leftover wraps in the fridge and they'll still taste yummy ^_^

Cranberry & Rosemary Potato Pie

Cranberry & Rosemary Potato Pie

star_onstar_onstar_onstar_onstar_on Comments (1)

I come up with this recipe when it's rainy Sunday afternoon, got nothing else in the fridge and too lazy to go out :P How much potato do you need ? It kinda depends on what you have. When I made these, I use chat potatoes which are tiny, and I use about 5 - 6. So of course if you have the normal sized one, you'll use less ( maybe 2-3)

Glace Blood Orange

Glace Blood Orange

star_onstar_onstar_onstar_onstar_on Comments (1)

I'm not sure if I'm doing this right (so correct me people if I'm wrong plz...)..Because I ended up with a bitter candied orange. Perhaps it's the blood orange itself ? Or perhaps there were some seeds that I missed and that's the source of the bitterness ? But I didn't mind the bitterness , so this is just perfect for me :)

Mini Apple Galette

Surprisingly...they are quite yummy :) I use strawberry jam to glaze ('coz that's what i have in the fridge), but feel free to use other fruit jams (blueberry will be nice....)

Earl Grey Shortcake

Earl Grey Shortcake

star_onstar_onstar_onstar_onstar_on Comments (1)

This was taken from a Japanese recipe book on chocolates. I have no idea what the title is or who the author is (my kanji is bad!) :P I never liked Earl Grey tea as a drink, but I like this cake :) There is just a light aroma of the tea when you eat it. I suppose if you like Earl Grey, just make a more concentrated tea syrup.

This is an excellent finger food at parties or afternoon tea, it looks great and taste fresh ! Takes no time to prepare too, as long as you have the ingredients all in front of you ready to go. To make the Choux Cases, please look at my older post on choux making :D

Hearty Vegetable Soup

Hearty Vegetable Soup

star_offstar_offstar_offstar_offstar_off Comments (0)

I come up with this recipe when I was looking into my fridge to see what is there to eat *_^ The ingredient are what I have at that time, so feel free to omit any of the vegetables that you don't like. It's best to leave the garlic skin-on when baking as they are much sweeter this way. The fennel is quite strong, so if you might want to decrease the quantity or omit it alltogether.

Choux Trio

Choux Trio

star_offstar_offstar_offstar_offstar_off Comments (0)

There are many cream filling variations that you can do, chocolate, raspberry, caramel, etc... I choose the green tea, coffee and vanilla for the colour contrast *_^

Cocoa Shortbread Sandwich

Cocoa Shortbread Sandwich

star_offstar_offstar_offstar_offstar_off Comments (0)

When I made the Fruit Tart, I got some leftover tart dough. So instead of wasting it, managed to get some cookie sandwiches ^_^ The shortbread is kinda bitter on its own, so the sweet white chocolate ganache helps !

White Choc Mousse w/ Hazelnut Brownie

Where's the Brownie ? I forgot to slice it open to take the photo :P But it's there though ! Hidden in the centre , it kinda acts as a hidden platform for the mousse ; )
