Tilapia Mint cakes
Serve with yogurt as an appetizer Or as the main course with some salad Or make a fish burger by adding the pattie in a bun with lettuce, tomatoes and onion. Replace Tilapia filets with Paneer(Indian cheese) to make Paneer Mint Cakes.
Spicy Shrimp
Spicy Shrimp with coconut - a variation of the "Sungtache Sukhe" (Spicy Shrimp) recipe prepared by my mother. I come from the state of Goa in India. Unavailability of exact ingredients in Los Angeles made me come up with a variation that still reminds me of my mom's "sukhe".
Stuffed Bread Pakoda (Fritter)
Apply the spread of your choice in between bread pieces, coat with chickpea flour batter and deep fry. A great way to use leftovers.
