To assemble the tacos just heat up a pile of tortilla’s in the microwave covered with a damp paper towel for about 30 seconds. Using 2 tortilla’s per taco, fill with meat, then top with minced onions, cilantro and salsa verde. Serve with a wedge of lime for squeezing.

When cooking the kasha, make sure you add some extra water (how much will depend on the type of kasha you’re making). The idea is to get it to a soft state where it turns into a paste as you stir it. I know, this sound unappealing but it’s essential to get the ingredients to bind into patties and the frying will fix the texture. If it’s not pasty enough, try adding a bit more water and cooking for a little longer.

While you could cheat and use instant dashi since you only need a little, I was making something else so I made my dashi with niboshi (dried baby sardines) and shitake mushrooms. If you want to make a veggie dashi, use extra shitake with some onions.

To assemble the salad, just put down 3 pieces of beet on a plate, put 1 or 2 slices of apple on top. Lightly dress the greens with some of the dressing (you won’t need it all), and place a handful of greens on top of the beets and apple. Top with some crumbled bleu goat cheese, candied walnuts and some fresh ground pepper.
