This is a self created recipe. I wanted a special cookie that was easy to make and this was the result. It would be ideal for the Christmas season but it’s simple enough to be made at any time. Cheese (Fries) Please!
French fries are one of my favorites foods, and the hardest to give up when I start dieting. This recipe for cheese fries gives me a lot of what I love with little guilt.

Mock Meat Balls
This recipe is amazing! I made it while DH was out and very briefly dropped them into the deep fryer (that I haven't used in 2 1/2 yrs!) just to get them evenly browned all around. At that point I stashed them in the oven warmer and made the rest of dinner. When DH got home everything was almost ready and I served him "meatballs in mushroom sauce" on brown rice. He LOVED them and had no idea that they weren't beef! In subsequent makings I haven't bothered with the deep frying and we both enjoy them.

Apple Pie Kefir Ice Cream
This past Thursday was my older child's first day of school. To celebrate, we went out for ice cream. As we walked from the car, we discussed what flavor he might like to have. His response was "pear!" I wasn't confident they would have such a gourmet flavor, so I mentioned that we could make our own pear ice cream sometime (though I'd never done it before!). On the way back to the car, after he'd enjoyed his scoop of mint chocolate chip and I my cookies 'n cream, we bought a 2 quart Cuisinart ice cream maker at Williams-Sonoma (which happened to be right where our car was parked - convenient!). When we got home, I immediately opened the box, washed the mixing bowl and put it in the freezer (it's filled with a fluid and needs to freeze completely before you can make your frozen treats). The next day, I decided to just go for it. But I did not have any pears. I examined my refrigerator and freezer and discovered: 1 bottle of vanilla low-fat kefir, 4 organic gala apples and some frozen all natural pie crust. So I decided to make: Apple Pie Kefir Ice Cream! My family LOVED it. Once completely frozen, it becomes quite hard, so if you plan to freeze and serve it another day, allow it to thaw for 5 minutes before serving, or make these into popsicles!
Lavender Scones
What a delicious scone recipe. This was my first experience with lavender and I loved it! It originally ask for 1/3 cup of honey which I replaced with Splenda. They come out high, fluffy, moist and so tender. They aren't "sweet" but have a lovely rich flavor.
Tofu Pad Thai
I've been on a wild romp to find ingredients for the perfect Pad Thai (the Thai restaurant I used to go to all the time was shut down by the Health inspector...awkward). I've tried tons and tons of recipes for Pad Thai, and this one I improvised is the one I wind up liking best. If you're either very strictly traditional or else extremely flexible, this might not be the recipe for you. But if you want it to taste the way they make it in restaurants here in the States, this is the closest I've been able to manage it. Here are the ingredients, where to find them, and what to do with them according to how I make my pad thai.

After looking up several rib recipes I decided they were too complicated and had too many steps. I made my own version. I bake them in the oven first for 15 minutes on each side and into the crock pot they go with a few simple ingredients. They fall off the bone, these are easy and fantastic! My husband doesn't like sauce dripping from the ribs so these don't have loads of sauce, but add as much as you like at the end!
