This is a great dish for everyone. Who doesn't love pizza ... especially pizza that is HEALTHY? You can make this dish fancy by pairing it with a Tomato and Fresh Mozzarella Salad, and a glass of wine ... or just a simple side salad or a side dish of your choice. I made it for my boyfriend and we fell in love with it. It will be a staple for dinners from now on.

I have not eaten steak since I was a little girl. I decided when I was 5 that I did not like it and have not touched it since then. I am currently dieting and my boyfriend was getting a little tired of pork, chicken, and fish, so I found this AMAZING healthy recipe that features steak.

This has been my favorite recipe yet. It is easy to prepare and a fresh take on salmon. My boyfriend and I agreed that we should have this meal once a week. I served the salmon over jasmine rise and grilled tomatoes and red onions. If you want to save yourself time prepping in all recipes buy the packages of vegetables that are already diced for you. I also served a bowl of hot and sour rice noodle soup as the side dish. I found the soup in the ethnic foods aisle. The one prepackaged soup bowl was plenty for 2 people. The jasmine rice was Uncle Ben's 90 second rice. The original recipe gave the ingredients to make your own peanut sauce...that was a little to much for me. I went the easy route and bought peanut sauce, which is also found in the ethnic food aisle. If you like salmon and Thai food then this dish will be a favorite!

This morning's breakfast was great. A 100 calorie pancake topped with fresh fruit and a drizzle of syrup. This recipe was super easy to make and really good. I should mention that the pancake batter makes 8 pancakes. I only had one so there was A LOT left over. If you have kids or are feeding more than one make the recipe as is. If you are cooking for yourself, scale back the ingredients, or you can just but the left over batter in the fridge and save it for later because I know that I will probably have this again as a snack.

This recipe is a deviation from a dish Rachael Ray created. The original recipe calls for cheesy waffle fries to be piled on top of the sloppy joes. Since I am watching what I eat, I opted to not use the waffle fries. I also modified the ingredients according to what I had on hand. To save time, I used veggies that are already diced. Do not cut corners and use bottled BBQ sauce...use the ingredients to make your own! This recipe is in my top 5 of things I have made so far.

Who doesn't love a good cheeseburger, especially a HEALTHY one? You can use lean ground beef, ground chicken, or turkey to make these burgers. I chose ground chicken. They are packed full of flavor and are sure to be a hit!

This recipe was supposed to be Lemon-Apricot Chicken. Turns out my boyfriend does not like Apricots and I did not have a fresh lemon, so I modified the recipe and made it my own. It was great. The purpose of coating the chicken in Bisquick mix is to give it a little bit of a crispy crunch. I'm sure you could skip this part and serve the ginger-peach sauce over plain baked chicken. I served this dish with Asparagus cooked in a grill pan with a little olive oil and onion powder...perfect pairing!
