When you get these rolls at Vietnamese or Thai restaurants, they're usually made with some rice noodles and shrimp. I decided to make a salad roll version with lots of color. The result makes for a light veggie appetizer loaded with lots of crunch that can be served with a variety of dipping sauces.

This traditional Filipino dish requiring minimal prep and cook time, usually calls for sauteed shrimp paste (bagoong alamang), but for the purposes of keeping the sodium low, I just used a bit of salt. Doing so allows the sweetness of the shrimp and tomato to come through. ((Bitter melon, or karela, has been proven to be very effective in the treatment of diabetes. If you are very sensitive to bitterness, simply soak and squeeze the melon pieces in a solution of salt water to reduce its flavor.))

I love tabouleh but I hate it when you get it ready made and it's just sitting in all this random juice. This version is a little lighter and uses couscous in place of bulgur. I also didn't bother adding scallions because I think the flavor from the red onion is enough. Hope you guys enjoy it -- it's great alone as a salad or served as a side with something off the grill.

Arroz con pollo isn't usually on the creamy side, but I wanted something that reminded me of risotto, so I just left a little more water in the pot. String beans were substituted for peas and chorizo was included for its smokiness. Enjoy!

Whenever I try to roast asparagus in the oven, I tend to space out and overcook it. I found that the quickest way to get perfectly cooked asparagus was to zap it for a few minutes in the microwave. The best part is you literally cook it right before serving, so everyone gets it steaming hot with a light crunch.

Eggplant omelettes are popular in Filipino cuisine. Traditionally, the eggplants are grilled whole in order to char the skins, which are then later removed. The roasted eggplant is then fried with egg and ground meat (beef). This version omits the meat, but I think it's pretty tasty as well. This dish makes for a great all-day omelette that you can enjoy during any meal.
